Devourable Guacamole

This is a tweak to a recipe a found once upon a time. It is arguably the best guacamole I have ever had. (restaurants included)

Ingredients
  • 2 ripe avocados, smashed
  • 2 vine ripe tomatoes, diced
  • 1 small sweet yellow onion, diced
  • 1 large clove of garlic, pressed
  • 2 packed T of fresh cilantro, chopped
  • 2 T fresh lime juice
  • 1/4 t cumin
  • 1/4 t cayenne pepper
  • 1/2 t sea salt

Smash avocados. Add all ingredients to medium bowl and mix.

Prep tip: When chopping cilantro, make sure to include the stems. Stems are where some of the best flavor lies.

Storage tip: Place plastic wrap on top of the guacamole itself, making sure to seal out air. This will keep your guac nice and lightly colored, instead of turning dark.

Sunday Morning Special

Serves 2

Ingredients
  • 3 eggs, scrambled with milk, salt, and pepper to your liking
  • 1/2 avocado, sliced
  • 1 vine ripe tomato, sliced
  • 4 oz of Canadian bacon or ham, diced
  • parmesan cheese

Directions

Pre-heat skillet on medium-low heat. Warm meat in skillet. Add egg mixture. When eggs are mostly done, add tomato and avocado. Serve with amount of parmesan to your liking.
