Apricot Almond Oatmeal Muffins

Makes 6 giant muffins

Ingredients
  • 1 1/2 c whole wheat flour
  • 1 c quick cook oats
  • 1 T baking powder
  • 1/2 t baking soda
  • 1/2 t sea salt
  • 1/2 c almonds, chopped
  • 1 1/2 c dried apricots, chopped
  • 1 egg, beaten
  • 1/4 c almond oil
  • 1/3 c honey
  • 1 c buttermilk
  • 1 t vanilla
  • 1/2 t almond extract
Directions

Preheat oven to 375 degrees and prep muffin tin. Combine dry ingredients in large bowl and wet in medium. Mix wet into dry and bake for 25-30 minutes.

Dried Apricots

I'd like to introduce you what I liken to the crack cocaine of the dried fruit world... Blenheim Variety Unsulfured Dried Apricots, available at your local Trader Joe's. I have always liked dried apricots. I would get them now and again. But, I have never tasted dried apricots this good! (And this recommendation is time tested folks as I'm sure we have gone through at least 10 bags by now.) I realize they sharply resembled dried shoe leather, but if you can get past the visual, I'm sure you will love these disgusting looking marvels. They are a little pricey at $6.99, but, they are worth every penny.
