Gingerbread

Instead of the sweet dessert version, I decided to make a healthier breakfast version.

Makes one loaf - Serves 8

Ingredients
  • 2 1/4 c whole wheat flour
  • 1/2 t baking soda
  • 1/2 t sea salt
  • 2 t ginger
  • 1 t cinnamon
  • 1/2 t cloves
  • 1/2 t nutmeg
  • 1/2 t allspice
  • 1 t Dutch-processed cocoa
  • 1 egg, beaten
  • 3 T butter, melted
  • 1/3 c light molasses
  • 1/4 c honey
  • 1/2 c buttermilk
  • 1/2 c milk

Directions

Preheat oven to 350 degrees and prep 9x9 baking pan. Combine all dry ingredients in medium bowl and all wet ingredients in small bowl. Mix wet into dry and bake for 40 minutes, or until done.
