Ingredients
- 1 3/4 c whole wheat flour
- 3/4 c wheat bran
- 2 t baking powder
- 1 t baking soda
- 1/2 t sea salt
- 1 1/2 t cinnamon
- 1 egg, beaten
- 1 c buttermilk
- 1/2 c honey
- 2 T butter, melted
- 2 t vanilla
- 1/2 t lemon extract
- zest of one lemon
- 1 1/2 c blueberries
Preheat oven to 375 degrees and prep muffin tin according to the method of your liking. Combine dry ingredients in large bowl and wet in medium. Combine wet into dry, fold in blueberries, and bake for 25 minutes.

Just got a ton of bran on clearance- think I'll try this with Earth Balance margarine or applesauce instead of butter.
