Farm Fresh Peach Oatmeal Muffins

Makes 6 giant muffins

Ingredients
  • 1 1/2 c quick cook oats
  • 1 c whole wheat flour
  • 2t baking powder
  • 1/2 t salt
  • 1/2 t cinnamon
  • 1/3 c honey
  • 1/4 c canola oil
  • 2 t vanilla
  • 1 egg, beaten
  • 3 ripe peaches, diced

Directions

Dice peaches. Mash about 1/4 of the peaches with a fork. Combine dry ingredients in medium bowl and wet in small. Mix wet into dry and add peaches. Bake at 350 degrees for 35 minutes.
