Pumpkin Raisin Pecan Muffins

Makes 6 giant muffins

Ingredients
  • 2 c whole wheat flour
  • 2 t baking powder
  • 1 t baking soda
  • 1/2 t sea salt
  • 1 T cinnamon
  • 1/2 t nutmeg
  • 1 c raisins
  • 1/2 c pecans, chopped
  • 2 eggs, beaten
  • 1 1/2 c pumpkin
  • 1/2 c buttermilk
  • 1/4 c butter
  • 1/2 c honey
  • 1 t vanilla
Directions

Preheat oven to 375 degrees and prep muffin tin. Combine dry ingredients in large bowl and wet in medium. Mix wet into dry and bake for 22 minutes or until done.
