Lime Blackberry Muffins

These might sound a little odd at first, but lime blackberry is a wonderful flavor combination!

Makes 6 giant muffins

Ingredients
  • 2 1/4 c whole wheat flour
  • 2 t baking powder
  • 1 t baking soda
  • 1/2 t sea salt
  • zest of 2 limes
  • 1 egg, beaten
  • 1 c non-fat buttermilk
  • 1/2 c honey
  • 2 T butter, melted
  • 2 T lime juice
  • 2 t vanilla
  • 1 1/2 c blackberries

Directions

Preheat oven to 400 degrees. Combine dry ingredients in a large bowl and wet in medium. Combine wet into dry, fold in blackberries, and bake for 20 minutes or until done.

If you would allow me a little latitude on your question, I believe you could be concerned with the intensity of the lime flavor, the tartness of the muffins, or both.

The lime flavor is neither intense, nor tart. The primary lime flavoring is the rind, which contains lime oil, and gives you a wonderful lime flavor without the tartness like you would get when you mainly use lime juice. So the level of lime is simply a nice compliment to the blackberry.
