how do you get your bread so uniform? Do you bake it in the bread machine?

Absolutely, although I believe the uniformity comes from the kneading process, rather than the appliance used for baking. I think the bread machine is able to knead the dough much better than a person is able. When researching bread machines, I learned that a bread machine with two paddles for kneading is far superior to a machine that only has one. Hope this helps and happy baking!

I had the same question about a year ago. I girlfriend of mine was telling me how much she loved bread flour because of it's rising power (due to higher gluten content). I found it at Whole Foods originally, but now my regular grocery store carries it too. It is technically hard spring wheat flour with some barley flour mixed in. The King Arthur version of Bread Flour has a white bag with bands of medium blue at the top and bottom. Hope this helps and happy baking!
